Even as its roots lie in the cuisines of Iran and Central Asian countries, Kashmiri cuisine has evolved its own distinctive character. It is a celebration of not just an occasion itself, but of preparing, laying out, serving and consuming together the most delicious victuals. While summer cooking consists of a variety of dishes prepared with fresh, green, leafy vegetables either cooked separately or in combination with a variety of meats, winter brings with it the smoky flavours and textures of dried turnips, aubergines and zucchini in a medley of preparations, as well as the sweet and sour taste of dried apples, plums and apricots. Best enjoyed when people sit together to share and eat, the centrality of food to Kashmiri social life cannot be overemphasised. In the words of a famed Kashmiri chef when asked why ‘Wazwan’ was served when outsiders come to Kashmir, he said, ‘It is our identity. IIC has made special arrangements to serve “Flavours of  Kashmir” from 18 November to 20 November 22 (03 days) for its members. These items shall be served in addition to the regular menu in the Dining Hall, Lounge & Lotus Lounge and also can be booked on prior demand as “Take Away” items.
