The Nawabs of Awadh were masters of sophisticated courtly culture and diplomacy, in which food played a role of paramount importance. The nafasat (refinement) and nazaakat (delicacy) of the cuisine was marked by its appeal to all the senses. Food had to look appealing, be aromatic and of course taste appetising, thus demanding constant innovation from royal cooks. Awadhi cuisine is famous for its magical blending of spices, slow-fire cooking (dum pukht) and its seasonal harmony with nature. IIC will be serving the special menu from 24th to 26th September 2021. These items shall be served in addition to the regular take away/dine in menu.
