Coorg, India’s fragrant ‘Coffee Country’, is defined by plantations and wild forests lush with yams, wild pig, boar, fowl, bamboo and other flora. Its unique and distinctive cuisine is season-specific, and imbued with the natural flavours of fresh and local ingredients. Bamboo is one of the most-used ingredients, as are rice and flavourful spices such as pepper, ginger and garlic. Kachampuli, their own version of a balsamic vinegar, is special to each Kodava home, adding piquant flavour to signature dishes. Although Coorgis are very fond of non-vegetarian food, the variety of vegetarian preparations is extensive. For a taste of Kodava Cuisine, IIC will be serving the special menu from 02nd April to 04th April 2021. These items shall be served in addition to the regular menu in the Dining Hall and Lounge, and also can be booked on prior demand as ‘Takeaway’ items.
